Vermicelli Teriyaki Tofu

This is a super easy and quick recipe that will give the carbs and protein your body craves! The taste is also satisfying and leaves you craving more... However, I must say that for women, it is advisable to have caution at the amount of tofu you consume as it may interfere with estrogen levels.




Ingredients:

14-16 oz packet of Tofu (I used medium hard)

Pack of vermicelli (use as much as you want)

Teriyaki sauce

Egg

Salt

Soy sauce (optional for vermicelli)

Oregano (optional to sprinkle on top)


Nutrition:

440 calories 15g fat (mostly from egg) 45g carbs 26g protein


Steps:

1) Take out the tofu from the packet and press it. To press, wrap it in a cloth (I have clean scrub cloths at home so I sometimes use those) or in paper towel. Set it on a plate and put a plate or two on top of it so that it adds pressure. This is to take out the liquid from the tofu since it soaks in water in the packet.

2) Slice the tofu into cubes or triangles as I did with about 3/4 of an inch thickness.

3) Take a pan and heat it over medium to high heat. Add about a tablespoon of olive oil or peanut oil. Take the slices of tofu and let them fry in the pan. Sprinkle salt on both sides. Wait until they are golden on one side (should take about 3 minutes), then flip and repeat on the other side.

4) While the tofu is frying, boil some water. Put the vermicelli in a bowl and once the water has boiled, pour it into the bowl with vermicelli. Let the vermicelli sit for a few minutes until it has softened, then pour the water out. If you want, you can pour some soy sauce on it for flavor.

5) Once the tofu is golden on both sides, turn down the heat tow low and add 1-2 tablespoons of teriyaki sauce into the pan. Continue to mix the tofu with the teriyaki sauce, be sure to avoid too much heat as teriyaki sauce can burn easily because it has a bit of sugar. Once the tofu is adequately covered in teriyaki sauce put it on top of the vermicelli.

6) Fry an egg in a pan, I prefer to do so with a bit of olive oil. Then when fried, place the egg on top of the tofu in the bowl. If you want, you can add seasoning on top, such as oregano and black pepper.

Voila! There is your super simple vermicelli teriyaki tofu bowl :)
