Banana Oatmeal Pancakes

Yield: About 20 mini pancakes
One of the easiest recipes for a delicious and healthy breakfast! Fiber, vitamin C, vitamin B6, and potassium that help lower blood pressure and cholesterol! What more could you want from a breakfast??

Ingredients:
2 bananas (better medium ripe to full)
1/2 cup almond milk
1 1/2 cups rolled oats
2 eggs
1 tsp vanilla extract
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tsp butter, for cooking
Greek yogurt, fruits, and sprinkled sugar for toppings
Steps:
1) Put all of the ingredients into a blender and purée until smooth.
2) Take a pan or griddle, and turn on medium heat. Add about a tsp of butter to use for cooking the pancakes.
3) Once the pan is hot, add 1/3 cup of batter for each pancakes, or for mini pancakes, 2 tbsp of batter. Cook for about 2-4 minutes until the pancakes rise and bubbles for.
4) Flip pancakes until the bottom is golden brown. If they brown too fast, lower the heat. Once done cooking, add on your plate and enjoy with fruits and greek yogurt with sprinkled sugar!
