Greek-Yogurt Mousse Brownies

Yield: 15-20 brownies


This is a healthier version of brownies with enough protein for a post-exercise snack! They're delicious, healthy, and super easy to make!



Ingredients:

Brownies

3/4 cup plain Greek Yogurt

1/4 cup cocoa powder

2 eggs

1/2 cup sugar (or substitute with coconut sugar)

1/4 cup flour (or substitute with almond flour)

1/4 tsp. sea salt

1/2 cup semisweet/dark chocolate chips

2 tbsp. butter (or substitute with coconut oil)

1 tsp. vanilla extract


Chocolate Ganache

1/2 cup dark chocolate chips

1/2 cup half & half

1/2 tsp. vanilla extract


Steps:

Brownies:

1) Preheat oven to 350 degrees F

2) Mix flour, cocoa powder, and sea salt in a separate bowl and keep for later

3) In another bowl, mix Greek yogurt, vanilla, and sugar. Then, mix in one egg at a time, fold and mix the batter until it is homogeneous and smooth.

4) Sift in the dry ingredients from the separate bowl into the one with the wet ingredients (Greek yogurt). Continue to whisk the mixture until it is completely smooth.

5) Take about a 9x9 inch baking pan and grease it (you can use butter to grease). Pour the batter into the pan, then randomly add chocolate chips on top wherever you want.

6) Bake for 20-22 mins so that it is a bit more gooey and like mousse. When done, take the pan out and let it cool.


Ganache:

1) While the brownies bake, start making the ganache. Take a small to medium sized saucepan and heat it over medium-high heat.

2) Add the heavy cream and let it warm over medium-high heat until it begins to start bubbling. Beware of it starting to boil.

3) Once the heavy cream bubbles, turn off the heat and add the chocolate chips and vanilla.

4) Continue to stir the mixture until it has all melted and is completely smooth.

5) Once smooth, take it away from the burner and let it slightly cool on the side. Do not let it cool completely or else it will harden.


Together:

1) Then, take the brownie pan and the ganache. Pour the ganache over the brownies.

2) Put them in the fridge to harden and it will turn out to be a mousse with a hard chocolate top. Cut into squares.

3) To top you can add some ice cream or whip cream. I added a couple of mint leaves on top for garnish.
