Baked Asparagus & Mushroom Tofu

This is an easy asian-fusion dish that is nutritious and delicious!


Ingredients:
Packet of medium hard tofu
teriyaki glaze
2 cups of rice
olive oil
oregano
2 cups of mushrooms, chopped
asparagus
Steps:
1) Take the tofu out of the container and dry it by wrapping it in paper towels (or reusable towels) and press it with a plate. Let it dry out for about 20 mins.
2) Take a pan and heat vegetable oil over medium high heat. Then, sauté the mushrooms until medium brown. Turn off the heat and then put about a tablespoon of teriyaki sauce on top of the mushrooms and make sure they are coated.
3) Take the asparagus and coat it with olive oil, oregano, salt, and pepper. Top it with parmesan and place on a baking pan covered with aluminum foil. Bake until the cheese has melted and the asparagus goldens.
4) Take the tofu then slice into small cubes. Take a pan and heat vegetable oil over medium high heat. Cook the tofu until they are brown on all sides. Once cooked, take off the heat and then put about 2 tbsp of teriyaki sauce on top and mix until all tofu is covered.
6) Cook the rice according to the package instructions. Serve the rice in a bowl, then place mushrooms on top with tofu and asparagus on top.
